It’s amazing what a good technique can bring to a simple dish of eggs, onions, and potatoes. The Tortilla Española is a national favorite of Spaniards, and is made by simply cutting and layering slices of potato and onion with a beaten egg mixture. The entire thing is cooked in a cast-iron pan, then inverted and sliced into wedges for serving.

Serve it at home with a green salad and some aioli on the side for a perfectly healthy yet indulgent dinner. It can also be cut into small chunks and skewered on toothpicks to make an elegant appetizer.
